Scallops can be intimidating to cook. If you overcook them, they become rubbery and tough to chew, yet if you undercook them they can be harmful to eat. We don’t want you to miss out on one of the most delicious seafood varieties just because you are afraid to cook them! That’s why we brought in the air fryer. Air frying is easy and fast, making dinner time seem less intimidating. We weren’t too sure how air fried scallops would turn out, but we can confidently say that these are a WIN in our book, and we think they will be in yours, too. Don’t let the scallop cooking get you down, try the air fryer and save time and energy!
Air Fried, Potato Crusted Scallops
Prep Time: 15
Preheat your air fryer to 400 degrees.
Line out 3 shallow bowls. In one, lightly beat your egg. In the next, combine potato flakes, bread crumbs, salt, and pepper. In the last bowl, toss your scallops in the flour to coat.
Dip the flour coated scallops in the egg, and then the potato mixture. Repeat for all of the scallops.
Arrange your scallops in a single layer in your air fryer. Air fry for 3-4 minutes. Once the initial 3-4 minutes is complete, flip your scallops, spritz them lightly with cooking spray, and return to the air fryer for a final 3-4 minutes.
