-1 lb of rockfish (or any other whitefish)
-1 cup all-purpose flour
-4 tsp paprika
-1 tsp garlic powder
-¼ tsp black pepper
-2 eggs beaten
-2 cups panko breadcrumbs
-Lemon wedges for serving
-Tartar sauce for serving
- In a small bowl mix together flour, pepper, paprika, and garlic powder. Beat two eggs into a separate bowl, and the breadcrumbs into a third bowl.
- Pat fish dry using a paper towel. Place the fish into the flour mixture, to the eggs, and then lastly into the breadcrumbs. Spray both sides with oil.
- Place fish into the air fryer nicely spaced apart and cook at 400F for 10-12 minutes until nice and golden brown, flipping them halfway through.
