These Smoked Salmon and Baked Eggs Stuffed Avocados are tasty, and full of lots of healthy fats!
Smoked Salmon and Baked Eggs Stuffed Avocados
Serves: 4
Prep Time: 5 minutes
Cook Time 30 minutes
Total: 35 minutes
Ingredients:
- 4 oz. of our wild caught Smoked Salmon
- 8 eggs
- Salt
- Pepper
- Parsley to serve
Directions:
Begin by preheating your oven to 425°F.
While your oven preheats, halve your avocados and remove the pits. If the center hole is too small, use a spoon to scoop out small chunks of avocado until there is enough room to hold an egg.
Place your avocado halves onto a baking sheet and begin lining them with smoked salmon pieces. Crack the eggs into a bowl and use a spoon to fill the center of each avocado with an egg yolk and as much egg white as it will hold.
Season with salt and pepper before gently placing in the oven to bake.
Bake for 15-20 minutes, remove, and then garnish with parsley flakes if desired.
